If you always hang the smaller end downwards from the begining of hang drying, to help an eveness of drying on pieces that have big difference in end size, it might help in those instances of when the ends vary in size much. Maybe string both ends, then you can switch if the top end dries too much later on.

  4. I cherish the moments of nibbling on homemade Basturma. SO delish, and my grandmother (Ma) would be a little upset with me for eating so much of it at one sitting…
    Ready to give this a go, but only one clarification is needed with "A pack of any kind of salt". What is the salt to meat weight percentage for the chaman ( fenugreek ) paste spread?
