If you always hang the smaller end downwards from the begining of hang drying, to help an eveness of drying on pieces that have big difference in end size, it might help in those instances of when the ends vary in size much. Maybe string both ends, then you can switch if the top end dries too much later on.
My grandmother taught me to make pastourma every year, in Greece. With almost the same recipe as you. But you must know how to eat pastourma. Viva Armenia.

What is the salt to meat weight percentage for the chaman ( fenugreek ) paste spread?
