I am from Yerevan, Armenia… To be honest,we have never cooked stuffed Kiufta… and its not a ground meat, its a minced meat… it looks like a paste… we were making a balls and poaching it in boiling water… we were adding onions, egg, and some alcohol(could be brandy or vodka anything) Then we were just dipping it in clarified butter yumm

  3. This is Great, yet before your making healthy alternatives, it would be nice to see your version of the Real thing.. Lamb, allspice, the broth with the lamb bones.
    We could also use a media dolma<sp? The mussels with the rice and currants.

  4. Turkey is an interesting substitute, but you cannot eat it raw. We always ate the kuftah with a cooked center and raw shell. It made my grandmother mad because we ate them before she could cook them! I miss raw kuftah.
